Lemongrass Ginger Breakfast Soup
This Lemongrass Ginger Breakfast Soup from Mickey Trescott's new cookbook, The New Autoimmune Protocol, is a stunning addition to your breakfast soup collection. If you haven't yet discovered soup for breakfast, let this be your introduction. It's one of the surprising pleasures of thyroid-friendly cooking. And while it may buck against our traditional ideas of what constitutes breakfast, a warm, savory bowl of veggie-packed, protein-rich, gut-loving soup is a wonderful way to start the day.
For many Thyroid Thrivers, breakfast can be a bit of a problem. As many of us discover that we feel better without gluten or dairy, many breakfast options get wiped off the table. Eggs are easy, fast, and gluten-free, but they also happen to be a common allergen or intolerance for some of us. Even if you do fine with eggs, it's easy to get in a breakfast rut with them. They quietly take over your GF/DF breakfast rotation until one day you wake up and realize you just can't face another scramble or runny yolk.

It's become one of my favorite ways to start the day, especially during cooler months.
