Strawberry Collagen Bonbons
These chocolate-covered strawberry collagen bonbons are a no-bake, freezer-friendly treat. They're made with simple, nourishing ingredients and are an easy way to add a little extra protein to your day.
When it comes to thyroid-friendly eating, treats can do a whole lot more than just taste good, and they definitely don't need to leave you feeling like you've eaten something "naughty." With a few smart ingredient swaps and strategic additions, dessert can support your body while still being a genuinely irresistible part of your menu.
That's exactly what these bonbons are.
Made with freeze-dried strawberries, coconut butter (sometimes called manna), collagen, a touch of maple syrup, and a thin coat of dark chocolate, they leverage that classic flavor pairing of chocolate-covered strawberries. No dairy, no gluten, no refined sugar, no junk. Just a treat that loves you back.

Your New Favorite Make-Ahead Treat
A big part of the THYROID30 framework is learning to eat in a way that supports your health and your happiness, without feeling like you're constantly white-knuckling through deprivation. Dessert is part of that picture, dear Thriver!
They work because every ingredient is doing more than one job:
- Freeze-dried strawberries bring bold, concentrated flavor without extra moisture or added sugar—plus a nice boost of vitamin C.
- That vitamin C actually supports collagen synthesis (so this pairing isn’t just trendy—it’s functional).
- Collagen powder blends right in for a balancing dose of protein, with no weird texture or aftertaste.
- Coconut manna + almond flour create that soft, truffle-like texture while adding healthy fats.
- Dark chocolate gives you that satisfying snap when you bite in, along with beneficial antioxidants.
The end result is somewhere between a truffle and cookie dough, wrapped in a thin chocolate shell.
They take about an hour start to finish (half of that is hands-off chill time), make 12–15 bonbons, and keep beautifully:
- Fridge: up to 1 week
- Freezer: up to 3 months
Make a batch once, and you’ve got something ready every time you want a little something sweet.

A Quick Note on Strawberries + Thyroid Health:
You may have heard that strawberries are “goitrogenic.” While strawberries do contain compounds that can influence thyroid function in very large amounts, this is primarily a concern with high intake of certain raw cruciferous vegetables—not the occasional serving of berries.
For most people, especially when eating a balanced, nutrient-dense diet with adequate iodine, strawberries are absolutely fine to enjoy and offer meaningful benefits like vitamin C and antioxidants.
Organic is a great choice for strawberries, but as always, dietary decisions should be about context, not extremes.
A Few Notes Before You Make Them
Use freeze-dried, not fresh strawberries. The recipe calls for freeze-dried strawberries for a reason. They deliver intense strawberry flavor and color without adding extra moisture. Fresh strawberries will throw off the texture.
Coconut manna vs. coconut oil. Coconut manna (also sold as coconut butter) is the whole coconut meat blended smooth. It's thicker and richer than coconut oil, and it gives the filling body and structure. Coconut oil won't work as a substitute here.
Taste the filling before you roll. This is your chance to adjust as desired. A little more lemon juice, a pinch more salt, a touch more cinnamon if you want it sweeter. The filling is fully edible as-is, so give it a try and trust your palate.
Chop the chocolate, don't use chips. Chocolate chips contain stabilizers that prevent them from melting as smoothly as bar chocolate. They’ll work in a pinch, but a chopped bar of good-quality dark chocolate will give you a thinner, glossier coating that sets beautifully.
Get organized before dipping. Have your chocolate melted and your parchment-lined sheet ready to go before you pull your filling balls out of the fridge. The process works best when the chocolate is warm, and the filling is cool.
